Fresh Fries
Real chips from the air fryer, no vat of bubbling oil required. Best tossed in a flavoured oil (garlic or chilli, your call).

Fresh chips out of the air fryer. Lovely with a flavoured oil like garlic or chilli. Short recipe, but the soaking step is the one nobody wants to do and the one that actually matters.
Ingredients
- Waxy potatoes (the firm kind that hold their shape)
- A flavoured oil (garlic, chilli, whatever you've got)
Method
- Wash the potatoes but leave the skins on. Cut them into even chips, about 1 cm thick. Even is the whole game here, or some burn while others stay raw.
- Soak them in water for at least 30 minutes, then rinse until the water runs clear. (this washes off the starch. it's the difference between a chip and a glued-together brick.)
- Air fry at 120°C for 15 minutes, to cook them through without colour.
- Toss them evenly in the flavoured oil, then air fry again at 180°C for 22 minutes, until crisp and golden.
Tip: salt them the second they come out, while they're still glistening.
