Fresh Fries

Real chips from the air fryer, no vat of bubbling oil required. Best tossed in a flavoured oil (garlic or chilli, your call).

  • ~40 min plus a soak

Fresh chips out of the air fryer. Lovely with a flavoured oil like garlic or chilli. Short recipe, but the soaking step is the one nobody wants to do and the one that actually matters.

Ingredients

  • Waxy potatoes (the firm kind that hold their shape)
  • A flavoured oil (garlic, chilli, whatever you've got)

Method

  1. Wash the potatoes but leave the skins on. Cut them into even chips, about 1 cm thick. Even is the whole game here, or some burn while others stay raw.
  2. Soak them in water for at least 30 minutes, then rinse until the water runs clear. (this washes off the starch. it's the difference between a chip and a glued-together brick.)
  3. Air fry at 120°C for 15 minutes, to cook them through without colour.
  4. Toss them evenly in the flavoured oil, then air fry again at 180°C for 22 minutes, until crisp and golden.

Tip: salt them the second they come out, while they're still glistening.
